Watermelon Cucumber Mint Salad

Looking for a refreshing summer salad on a warm afternoon or evening? This is it! This watermelon cucumber mint salad is simple to make. I used fresh ingredients for this salad and combined a light honey lime dressing that I made from scratch. This watermelon cucumber mint salad is the perfect addition to any summer gathering. Gather Your Ingredients

For this watermelon cucumber mint summer salad, you will need to gather the following ingredients. I gathered them all on a plate and then combined all of the ingredients into a small bowl. I had just enough left for lunch the next day! Yum!

The Salad

fresh watermelon- Dice into small triangles and cubes. I used about two large slices.

cucumber- I used an English cucumber. I sliced it into small quarter sized pieces.

mint- I am growing mint in my garden so I used that. I also used chocolate mint instead of the traditional mint. You want to balance this out with the basil so I used about 3 sprigs. It can be overpowering! Roughly chop, or tear with the basil below.

basil- Fresh basil also used from my garden. This can be overpowering so I only used about 3-4 leaves.

avocado- 1 whole avocado diced into chunks.

The Dressing

honey- I used roughly 2 tablespoons. Pour into a small bowl.

lime- slice and squeeze into honey and mix.

salt- add a pinch of salt to the honey and lime dressing.

Once you’ve combined all of the ingredients, lightly drizzle over the salad and toss the salad until all of your ingredients has a nice coating. The fizz of the watermelon and lime combined with the basil and mint is such a refreshing taste on a hot summer day. You can also add feta cheese for an additional flavor. I’m taking a break from cheese for a bit, so I added avocado instead. Either way, I hope you like this watermelon cucumber mint salad this summer. Enjoy!

Watermelon Frozen Yogurt Treats

Make watermelon frozen yogurt treats. 1 1/2 cup nonfat Greek yogurt. Chobani works well. 2 cup diced seedless watermelon. 1 tablespoon honey and chocolate chips. Combine mixture and freeze overnight in any type of freezer mold of your choice. Take out and sprinkle a few chocolate chips on top. Enjoy!
